The name broccoli comes from an Italian word that means “cabbage sprout.” Broccoli is a relative of cabbage, Brussels sprouts and cauliflower. It is available year-round at grocery stores, but peak season is October through April.
Broccoli is an excellent source if vitamin A and C and also has riboflavin, calcium and iron. This salad will add extra vitamins to the family dinner. The bacon and cheddar cheese will certainly help for taste. It is delicious and simple to make.

BROCCOLI SALAD
Ingredients:
1 lb. broccoli, cut into smaller pieces
6 slices cooked bacon, crumbled
1/4 cup red onion, finely diced
1/2 cup raisins (or dried cranberries)
3/4 cup shredded cheddar cheese
1/2 cup toasted, salted sunflower seeds
1 cup real mayonnaise
2 Tbs. white vinegar
1/4 cup sugar
Salt and pepper to taste
INSTRUCTIONS:
- In a small bowl, whisk together mayonnaise, vinegar, sugar and salt and pepper. Set aside.
- In a large bowl, mix together the broccoli, crumbled bacon, onions, raisins, cheese and sunflower seeds. Add the mayonnaise mixture and gently stir. Chill and serve.
