Sometimes the simplest of recipes are the best. Growing up, I remember one of the cakes my mom made was a chocolate cake with peanut butter frosting. I found a recipe, made the cake and it was a winner. Please give this recipe a try and let me know how you like it at brencook4u@aol.com.
CHOCOLATE CAKE with PEANUT BUTTER FROSTING
Ingredients:
2 cups all purpose flour
2 cups sugar
3/4 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp. baking powder
2 large eggs
1 tsp. salt
1 cup buttermilk
1 cup vegetable oil
1 1/2 tsp. vanilla
1/2 cold brewed coffee
INSTUCTIONS:
- Preheat oven to 300 degrees. Grease bottom of 13×9-inch pan.
- Mix the flour, sugar, cocoa, salt, baking powder and baking soda together in large bowl.
- Beat eggs in mixing bowl with electric mixer until bright yellow and slightly thick. Add oil, coffee and vanilla to the eggs and mix well. Add the flour mixture, alternating with buttermilk, and mixing after each addition. Be sure to scrape down and continue mixing after additions.
- Scrape batter into prepared pan and bake for 1 hour. Be sure to test cake in center with a toothpick. When cake is done, remove from oven and cool completely.
Frosting Ingredients:
1/2 cup butter, softened but not melted
1 cup creamy peanut butter
3 Tbs. heavy cream (or more, if needed)
2 cups confectioner’s sugar
