Brenda’s Recipe

They had me at “bacon” for this recipe. Make-ahead casseroles are the best comfort food and they make it easy for dinner prep. This casserole includes a tasty combination I think your family will like. Email me at brencook4u@aol.com with your comments. 

CHICKEN BACON RANCH CASSEROLE 

Ingredients:

2 pounds boneless chicken breasts, cooked and shredded

8 slices cooked bacon, chopped

1 pound frozen spinach, thawed (squeeze water out to drain well)

3 cloves garlic

3/4 cup ranch dressing

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

INSTRUCTIONS:

  1. Preheat oven to 375 degrees.
  2. Combine chicken, bacon, spinach, garlic, ranch dressing and half of the shredded cheeses in a large bowl. Stir well. Transfer to a 9×13-inch oven safe casserole.
  3. Top with remaining shredded mozzarella and cheddar cheese.
  4. Bake for 15-20 minutes or until bubbly.
  5. Remove from oven and let rest about 8 minutes before serving.
