Brenda’s Recipe

Chutney is a spicy condiment of fruit, vinegar and aromatics. You can use this “topper” in place of things like ketchup, mustard or barbecue sauce. In just a few minutes, you can prepare a delicious addition to your favorite grilled meat or vegetable.

FRUIT CHUTNEY

Ingredients:

1 Tbs. butter or vegetable oil

1cup chopped onion

1 cup fresh sweet pepper, seeded and finely chopped

4 garlic cloves, minced

2 Tbs. maple syrup or honey

1 Tbs. white balsamic or red wine vinegar

2 Tbs. snipped parsley or other fresh herb

1 cup mango or other fresh fruit, chopped

 

INSTRUCTIONS

In a 2-quart saucepan, heat butter over medium heat. Add onion, fresh pepper and garlic, cook 4 minutes or until onion is tender, stirring frequently.

Stir in remaining ingredients.

Bring to boiling, reduce heat and simmer uncovered 15 minutes or until thickened and fruit very soft.

Cool. Serve at room temperature. Store in refrigerator.

Makes about 2 1/2 cups.
