This recipe is a great addition to any meal or simply make it as an appetizer. You can place them on a plate sprinkled with a bit of chives for appearance.

MASHED POTATO PUFFS
Ingredients:
2 eggs, slightly beaten
1/3 cup sour cream
1 cup shredded cheddar cheese
2 Tbs. shredded Parmesan cheese
3 cups mashed potatoes
1/4 cup minced chives
1/4 cup cooked crisp diced bacon
Salt and pepper to taste (I use 1 tsp. each)
Additional sour cream to garnish
INSTRUCTIONS:
1. In a mixing bowl, combine potatoes with chives, bacon, salt and pepper.
2. Mix together by hand well.
3. In a separate bowl, beat eggs with an electric mixer. Add sour cream and beat again.
4. Add cheddar and parmesan cheese, mixing together thoroughly.
5. Add mashed potato mixture, mixing again until incorporated.
6. In a well greased mini muffin tin, scoop into each cup.
7. Bake 30 minutes at 400 degrees. Makes about 2 dozen.
8. Garnish with sour cream and chives.
