Brenda’s Recipe

Pie is my first recollection of dessert growing up. My mom rarely baked cookies or cakes, as she loved to bake homemade pies. Although most of her pies were fruit or cream pies, I have received this delicious pie for my own collection of recipes.

COCONUT OATMEAL PIE

Ingredients:

3 eggs, beaten

2/3 cup granulated sugar

1 cup brown sugar

2 Tbs. melted butter

2/3 cup flaked coconut

2/3 cup quick oatmeal

2/3 cup of milk

1 tsp. vanilla

9-inch unbaked pie crust

 

INSTRUCTIONS:

  1. Preheat oven to 375 degrees.
  2. Beat eggs and sugars together. Mix well to dissolve sugars.
  3. Slowly add rest of ingredients, mixing well.
  4. Pour into prepared unbaked crust.
  5. Place in preheated oven and bake for 35-40 minutes.
  6. Remove from oven and let cool completely.
  7. After cooled, I like to drizzle with caramel or chocolate topping, and then serve each piece with a dollop of whipped cream.
  8. Refrigerate pie after serving.
