Sweet potatoes are actually a large edible root that belongs to the morning glory family. They are high in vitamins A and C.
Sweet potato fries and chips are becoming more popular.
There are many varieties of sweet potatoes, but the two most common are the pale skinned sweet potato and the dark skinned sweet potato that we call the “yam.”

Ingredients:
3 sweet potatoes
2 tsp. olive oil
2 Tbs. butter
3 Tbs. brown sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Pinch of ground ginger
Sea salt to taste
Pure Geauga County maple syrup
DIRECTIONS:
Preheat oven to 350 degrees.
Coat a small baking dish with cooking spray.
Peel and dice the sweet potatoes into 1-inch cubes and place in baking dish.
In separate microwave dish, melt butter and add oil, brown sugar, cinnamon, nutmeg, ginger and salt.
Pour over sweet potatoes and bake in oven for 50-60 minutes. Stir the potatoes once or twice while roasting.
Remove from oven and drizzle about 1 tablespoon maple syrup over potatoes. Enjoy.
